Banana Chocolate Chip Muffins

KJ and I were mourning the loss of amazing banana chocolate chip bread/muffins….

And then she made this recipe and they are AMAZING. They are moist and taste exactly like what you would expect their non-paleo flour counterpart to taste like.

“2 cups grated sweet potato
3 bananas (the icky overripe ones actually work the best)
2 eggs
1/3 cup creamy honey, melted
1 capful vanilla (real kind)
1 generous tsp baking powder
3/4 tsp baking soda
1/2 cup olive oil
1/2 cup coconut flour
3/4 cup organic dark chocolate chips or to taste. (But don’t get carried away or the muffins will just be lumps of melted chocolate).

Heat oven to 365.

* Blend sweet potato and bananas into gloppy mush
* Add vanilla. Mix
* Add eggs. Mix
* Add honey. Mix
* Add baking powder, baking soda, coconut flour. Mix
* Mix some more properly so there are no floury lumpy bits.
* Add oil. Mix.
* Add chocolate chips. Mix.

Wipe a bit of olive oil around each cuplet in a muffin tin. Spoon in batter until full but not overfull. Bake approx 30 mins until golden brown and knife comes out clean. Let sit in tin for a few minutes and then gently tip out onto plate. Consume.

Makes 12 or so, depending on how much batter you eat.”

  1. I might have had one of these…and they are just superb. Je ne pouvais pas croire qu’ils n’étaient même pas fait avec de la farine. Délicieux!

  2. I just made these and made a few changes based on what I had at home…

    minus one banana
    plus one egg
    added some shredded coconut
    added some walnuts

    …STILL turned out moist and amazing!

    Connor said he made them with protein powder instead of coconut flour and also said they were amazing.
