Kat made another go at the pancake substitutes…. here it is:
“This recipe is from www.everydaypaleo.com who’s author is about to come out with a book that I have on pre-order so will be trying lots more of Sarah Fragoso’s recipe’s as well as lots that she has on her website – well worth checking out :). I tweaked the recipe a bit 2nd time around which I’ve noted below.
These are super easy – Mix together 2 cups of almond meal, 3 eggs, 1/2 can of coconut milk, 1/2 banana (or a big drizzle of coconut or walnut oil but I found Banana made them taste better and hold together better..), 2 apples grated, and a whole lot of cinnamon (like at least a couple of full teaspoon fulls – I go for more like a table spoon full ;).
Mix it all up and I found that blending it so the banana gets really mixed in works well and purees the apple too. If you like seeing and eating the grated apple, blend everything else together and mix in the apple last – they’re a bit chewier with the grated apple shreds still visible.
Heat up an oiled (coconut oil or butter) griddle pan or frying pan and drop in about a heaped desert spoon size amount of batter for each (easier to flip if they’re small) to the hot pan and cook on each side for about 3 minutes till nicely browned, drizzle with a little maple syrup and/or serve with bacon, berries or what ever. You can also try mixing grated coconut into the mixture or berries but I haven’t tried that yet.
Best so far and pretty good eaten cold with Almond Butter or on their own as a snack…”
