Stuffed Breakfast Portobellos

“Sauté bacon, sweet peppers, garlic, onion and jalapeno in a frying pan. Carve out the “guts” of the portobello. Mix eggs (I used 5 for 2 portobellos) and fried ingredients.

Place ports in some tin foil to maintain structural integrity. Tightly wrap foil around the ports. Pour the ingredients into the ports and place in a oven safe dish and put in oven around 365 degrees.

Bake until you see the grease on top and cooked eggs underneath. Then broil lightly to crisp it all up.

Remove from oven and gently remove foil from the outside.
