Kathleen’s simple little creation that she was bragging about the other day…

“I shook enough almond flour to coat the chicken into the bowl. (I used Trader Joe’s almond four – its finer than Bob’s Red Mill). I mixed some madras curry (1/2 tbs?) and salt . Then I tossed the chicken thighs in the mix, made sure they were coated all around and then baked them for an hour on 350. Fingers crossed!”
