Raw Coconut Soup

Jen White sent me this recipe…

This isn't Jen's soup but I needed something visual!

“1 avocado, diced
1/2 cucumber, peeled and diced
1/2 red bell pepper, diced
1 medium heirloom tomato, diced
juice of 2 limes
4 Tbs. olive oil (or raw coconut oil)
1 garlic clove, minced
2 handfuls cilantro
1 Tbs. chili powder (more or less to taste!)
1 tsp. salt
1 cup coconut milk

Blend all ingredients until smooth and silky. Serve chilled on a hot day. Nice with grilled chicken. This is really quick to make and lots of variations/subsitutions: (lemon juice and curry powder, lemon juice and dill, roasted peppers instead of raw, etc!)”
