Nut balls

…knock off from Energy Balls.

1 jar of almond butter (340g)
1 cup of cranberries
1/2 cup of sunflower seeds
1/4 cup of roasted sesame seeds
1/4 crushed unsalted cashews
1 cup of almond flour (almond meal)
1/2 cup hazelnut flour

1/2 cup to 1 cup unsweetened shredded coconut for coating balls

Directives:
Put everything except coconut in bowl. Mix all ingredients with your hands. Roll into balls. Make them the size that you want. Store in fridge for up to one week or freeze for up to two months.

Get creative:
Feel free to play around with the amounts. If you don’t have hazelnut flour, just use almond flour. The idea is just to replace rolled oats in the original recipe to absorb the almond butter. Go with feel. You don’t want it to feel to wet and sticky, but not too dry either. There is no honey or agave in this recipe, so that almond butter is the only wet ingredient. Other options: add raisins, pecans, a hint of vanilla extract, diced up apricots, dried blueberries, goji berries.
