KJ is a good inventor….

“1 large brown onion
Big ass bag of white mushrooms
Good handful fresh oregano (thyme would also work)
3 onion or mushroom or beef organic stock cubes
1 can light organic coconut milk
splash olive oil
sea salt and black pepper to taste

Rough chop onion and mushrooms and saut√© in olive oil. When soft, add stock cubes with splash of water to melt. Add oregano or thyme. Stir. Add approx. three cups water, salt and pepper and simmer 45 mins or so. Scoop out and quick blend in food processor. Add back to liquid and add coconut milk. Simmer another 10-15. Done.”
