“Matt & Mel’s Wedding Hangover Chicken”

Tanya and Slater invented this one in the spirit of the day after Matt & Mel’s wedding:


3 Chicken Breast Halves
3 Strips of Bacon (finely chopped & fried)
1 Tomato
Shredded Zucchini (fried in Coconut Oil)
Diced Mushrooms (fried in Coconut Oil)
Home-made Basil Pesto

For Pesto:
Combine large amount of fresh basil, olive oil, pepper, 3 garlic cloves, lemon juice & walnuts in a processor and blend it up.

How to:

Cut breasts in half (butterfly).
Spread pesto on the middle
Lay bacon, mushrooms/zucchini mixture & tomatoes down middle.

Fold breasts together like a burrito and tie together using string.
sprinkle a bit of Paprika on top for colour.

Lay in a pyrex dish, I very lightly greased mine in coconut oil.

Bake for 25-30 mins @ 400F
