Ginger Pork Lettuce Wraps from the Slowcooker

“For roast:
* Bone-in shoulder or butt pork roast
* 1/3 cup fresh ginger
* 1/3 cup sugar (or agave)
* 6 garlic cloves

* 1 tsp salt and pepper

Pulse in a food processor, rub on roast and place in slow cooker. Cook on low for approx 8 hours.

* 3/4 cup chopped green onions
* 1/3 cup chopped cilantro
* 1/4 cup minced fresh ginger
* 1/4 cup grape seed oil
* 2 tsp soy sauce
* 1/4 tsp chili paste (or hot sauce)
Shred the pork with two forks once cooked and rested, and serve with rice and sauce wrapped in lettuce leaves (we used butter lettuce).
Super easy and ready when you get home from work! And the boys even ate it. 🙂 I’m going to make those muffins you fed us the other night, the kids loved them!”
