“I made this E-caf pudding Saturday day morning and it’s a nice treat! It’s like tapioca pudding. See link for why it’s called E-caf.
1 can coconut milk (full-fat)
1/2 – 2/3 cup chia seeds (you are looking for a 2:1 or 3:1 ratio)
Shredded coconut, to taste
Handful of nuts or seeds, to taste (I added goji berries)
Splash of agave nectar or honey (optional, I did not add any)
I also added a teaspoon of cocoa powder for a hint of a chocolaty taste.
Shake coconut milk well since it separates in the can. Pour into non-reactive bowl or deep dish. Add all other ingredients and stir to mix thoroughly. Refrigerate for at least 2 hours to allow pudding to set and achieve proper consistency.
