I bought mexican chorizo sausages at a Mexican store ( Cilantro & Jalapeño ) in the Lonsdale Quay in North Vancouver. They have great mexican ingredients, including corn tortillas.
Take the 5 sausages out of casing and fry in pan on medium heat with 1/2 lbs ground beef.
Let meat cool and then stuff in peppers. Place in oven for 30 minutes at 350.
Take out and top with a little pieces of avocado. Mild salsa could be nice too.”
