Chocolate Pecan Cranberry Cups

“Chocolate Pecan & Cranberry Cups

* 1 Package Dark Chocolate (the darker the chocolate, the more bitter the final product is – I found 60 or 70% organic dark chocolate worked best)

* 1 Cup Organic Coconut Milk
* 1 tsp Organic Vanilla Extract
* 1 Tablespoon Agave (optional)
* 1 Cup Pecans, chopped
* 2/3 Cup Dried Cranberries, chopped

Directions:

1. Break chocolate into even pieces and melt in a pot over low heat. Do not bring chocolate in contact with water or it will ruin
2. Once chocolate is melted, add coconut milk, vanilla and agave
3. Stir melted chocolate mixture regularly
4. Meanwhile, in a small bowl, mix pecans and cranberries
5. Place ungreased mini baking cups, in rows, on a baking sheet
6. Scoop one teaspoon of pecan/cranberry mixture into each cup
7. Scoop one tablespoon (approximately) of melted chocolate mixture into each cup, over pecans and cranberries
8. Place tray in freezer to set
9. Keep cups in freezer and serve cold”
