My cousin and her kids were over for dinner last night and we had these… yummy and fun to make. All 4 of us had our hands in the ingredients making the skewers.
* soak 10-12 wooden skewers in water
* 4 large organic chicken breasts
* 1-2 large yellow onions
* 2 large green peppers
* 1 large fresh delicious pineapple
* olive oil
* 3 cloves of fresh garlic
* fresh minced ginger
* sea salt and pepper
Marinate the chicken and vegetables in the the olive oil, garlic, ginger, cilantro and s & p.
Skewer, BBQ, and eat. The only cooked pineapple I had ever had was the canned variety on pizza which I am NOT a fan of….. this BBQ’d pineapple was AMAZING!
We topped off this meal with some Coconut Bliss complete with licking our bowls.
