Got this email from Mel early this morning 😉 :

“I was having a tea this morning and felt like a piece of toast, so I made some *bread*.
If you make this, don’t think it’s going to taste like a French bread or what ever else your memory of
bread it…because this is BETTER. It’s heavy, filling, and a slice is all you need. I toast it in the oven because the loaf does not really rise like bread and putting it in our toaster did not work out too well.
It’s more of a shy, low level bread – that’s yummy with a little almond butter.
Of note, almond meal / flour is on sale this week in the Save-On bulk section.

Gluten Free Simple Bread

* 2 ½ cups blanched almond flour
* ½ teaspoon celtic sea salt
* ½ teaspoon baking soda
* 3 eggs
* 1 tablespoon agave nectar
* ½ teaspoon apple cider vinegar

In a large bowl, combine almond flour, salt and baking soda
In a medium bowl, whisk the eggs, then add agave and vinegar
Stir wet ingredients into dry
Scoop batter into a well greased 6.5 x 4 inch baby loaf pan
Bake at 300° for 45-55 minutes on bottom rack of oven; until a knife comes out clean
Cool and serve
