Banana-Zucchini Bread… Mountain bike ready style

“This gets made pretty regularly at our house and recently helped fuel me while riding in the Test of Metal-it must be good because I’m still not sick of it after force feeding it to myself over the course of many hours…The recipe works as a loaf, or as mini ‘muffins’ that you can shove in your mouth with one hand!

* 1/2 cup coconut flour
* 3/4 tsp. baking soda
* 1/2 tsp. salt (optional)
* 1 tbs. cinnamon
* 4 eggs
* 2-3 Tbs. raw honey or agave nectar (I use 1 Tbs of honey)
* 1 cup shredded zucchini, excess water squeezed out
* 1 ripe banana, mashed

I also add in 1/4-1/2 cup walnut pieces and 1/4-1/2 cup unsweetened cranberries…I sometimes add in 1/4 cup of dark chocolate chips 🙂 …I think that I’ve also added a couple Tbs of coconut oil before too and it was good – but not necessary.

Preheat oven to 350 degrees. Grease or line a loaf pan with parchment paper; set aside.

Mix the wet ingredients in a large bowl. Add the remaining ingredients and stir until there are no lumps.
Pour into pan and bake for 45-50 minutes or until a toothpick inserted into the center comes out clean. Mine never seems to be done in this amount of time so count on 45-50 minutes-ish and keep an eye on it…
