A paleo “carb loading” dinner

Nothing crazy or ground breaking here, but I thought I would share my “night before 5 hours of running the next day” dinner. I do want to take in some higher glycemic carbohydrates so in this quite large (and surprisingly heavy) salad I put:

– spinach base (but not too much because really I find spinach and other greens to generally be a waste of space on the plate… kind of like the rice of the paleo world)
– sliced up steak
– half of a yam chopped finely and fried
– grilled zucchini
– strawberries
– goji berries
– avocado
– cucumbers
– olive oil for dressing
